MNF Dinner is HERE!
The Broncos play The Chiefs tonight and we are throwing our Monday Night Football party with a twist on tacos! I’ve been cooking low carb/high fat for the last 6 months and these are a family fave!
Here is a quick and easy recipe for MNF or anytime your fam is craving Mexican!
Cheese Shell Tacos 
Cheese shells
 4 c cheddar cheese
Taco filling
 1 lb ground beef
 2 T Sugar free taco seasoning
 1/2 c water
Topping suggestions
1 Tomato diced
 1 Avocado cubed
 1/2 c Chopped onion
 2/3 c Sour cream
 Shredded lettuce
 Cilantro
Preheat oven to 375. Line 2 baking sheets with parchment paper.
Arrange shredded cheese in 6 piles, leaving several inches between so they don’t run together. Bake for 7-10 min until the edges start to brown and the cheese is no longer runny.
Meanwhile, prop up a wooden spoon or kabob sticks spaced with cups or cans.
Remove the melted cheese rounds and while cheese is still flexible, use a spatula to transfer the cheese and drape over the spoon or skewers. The shell will harden as it cools. Repeat this process with the remaining shells.
In a Medium sized skillet, brown the ground beef, then drain the fat. Add the taco seasoning and water. Stir well, bring to a simmer, and allow to reduce for 3-5 min.
