Cajun Sausage With Rice


I’ve been using a new cookbook called “Southern Keto”  and the recipes are delish! I’ve never really liked spicy food, but this Creole dish is one to write home about!

2 T Avocado Oil

14 ounces fully cooked andouille sausage, sliced.

1/2 c diced onions

1/2 c diced green peppers

1 rib celery, diced

1 (12oz) bag of riced cauliflower

1 c vegetable broth

1 t Creole Seasoning (2T paprika, 2T salt, 2T black pepper, 1t onion powder 1t dried basil, 1t ground oregano, 1t cayenne pepper)

1 bay leaf

Heat the oil in large skillet and brown the sausage over M heat 2-3 min. Add veggies and cook til tender. Add cauliflower, seasoning and bay leaf to the skillet, continue cooking, stirring occasionally until cauliflower is tender. Reduce heat to low and simmer for 10 min. Remove bay leaf before serving!
